Rotisserie chicken is the hero of short-cut dinners. Pick one up and you’re three quarters of the way to a quick-and-delicious meal, whether the chicken is the center of the plate or shredded for a wrap, salad or bowl.

Here are three ways to take this limited-edition Tequila Lime bird and fly with it:
1. Make a super-easy burrito by shredding the meat (you can use your fingers, no knife required!) and layering it on a large tortilla with your choice of rice, beans, cheese and salsa. Go spicy with a sprinkle of taco seasoning and diced jalapenos. Roll it up and warm it in the oven or microwave.
2. Get your greens with a salad of thinly sliced kale or romaine, diced chicken and squash, sliced avocado and a sprinkling of cotija or goat cheese and toasted pumpkin seeds. Toss it with ranch dressing spiked with chipotle sauce or a tangy lime dressing.
3. Make a Southwest-style grain bowl with your favorite whole grain (quinoa is terrific) topped with shredded chicken, chopped roasted squash, diced tomato and avocado, cilantro leaves, and salsa and serve it with lime wedges on the side.
Got leftover meat? It’ll keep refrigerated for about three days so you can enjoy it for lunch (make sure it’s well sealed so it doesn’t dry out). Use it in a tasty wrap like Jamaican Jerk Chicken Wrap or in Spring Rotisserie Chicken Sandwiches or Tarragon Chicken Salad Sandwiches.
