Serves 6 to 8
  • 1 1/2 cup pineapple juice
  • 4 whole star anise
  • 2-inch piece fresh ginger, cut into thin slices
  • 1 large pineapple, quartered lengthwise, core removed, cut into 1/2-inch thick slices
Serves 6 to 8
In a large high-sided skillet, combine pineapple juice, star anise and ginger; bring to a boil over medium-high heat. Add pineapple slices, reduce heat to medium-low, cover and cook, stirring several times, until pineapple is very tender, about 30 minutes. Uncover and transfer pineapple slices to a serving platter.

Increase heat to medium-high and bring braising liquid to a boil. Cook, stirring frequently, until reduced to a syrup, about 3 minutes. Pour over pineapple to serve immediately or chill until ready to serve and enjoy cold.
